It is pretty high fat (not a great protein source) but free of nitrates and corn syrup. I have never heard of cross contamination problems, or seen reactions like that, but I never called the company either. It may be the sausage that are the problem. I know I chose not to buy them, but I think it was due to price rather than gluten contamination (much cheaper to add sage & salt to ground turkey, and make your own.)
