Guest guest Posted April 9, 2010 Report Share Posted April 9, 2010 I am pretty new to SCD, but when we started, we had already been GF for many years. I had used rice for a substitute for bread in meatloaf in the past. When we started SCD, using squash for anything was brand new--but it seemed logical that it would add moisture, so I now use about 2/3 cup per lb. of meat--you can adjust the amount to what you like. I usually use acorn, but you can use any kind you have or like. It makes the meat a little sweeter, but very moist. It could be that others have already shared this tip.
