Guest guest
Is legal? I thought all soy was off limits...and if it is legal, why is soy lecithin legal? Guest guest
Mara,Have you tried adding just a bit of french cream to the coconut yogurt and blending to see if it stays together?AmeliaTo: BTVC-SCD Sent: Sun, May 23, 2010 11:23:58 PMSubject: Re: Re: soy lecithin > Mara, > > The gelatin isn't enough? The coconut milk still separates - which tastes fine once you mix it, but it would be nice to have it look a little more finished if I want to serve it for company. > Egg white? > Soy lecithin can work.. I don't have it on hand at the moment. I'm trying blending the banana into the milk to see if this works. > > Hope people have better suggestions. > > What kind of cocnut milk desert are you making? Espresso banana coconut panna cotta I'm working on a SCD recipe (advanced - because of the coffee). Unfortunately for me, this involves making it over several times until I get it right - and then eating the results. Real hardship! Guest guest
I'm not eating dairy. Which is why I'm eating the coconut yogurt at the moment. (Also, I like it, but that is another issue.) Actually, the banana, whizzed up in the coconut milk did the trick. So I guess I can try that for the yogurt too, but there it doesn't bother me, since it is just for me and not something I would necessarily serve guests. Mara Mango is also very smooth and creamy like banana, if you can have a mango.
