Soy Lecithin

Is legal? I thought all soy was off limits...and if it is legal, why is soy

lecithin legal? (And what is it?)

The coconut milk still separates - which tastes fine once you mix it, but it would be

nice to have it look a little more finished if I want to serve it for company.

I don't have it on hand at the moment. I'm trying blending the banana

into the milk to see if this works.

Espresso banana coconut panna cotta

I'm working on a SCD recipe (advanced - because of the coffee).

Unfortunately for me, this involves making it over several times until

I get it right - and then eating the results.

Real hardship!

I'm not eating dairy. Which is why I'm eating the coconut yogurt at the moment.

(Also, I like it, but that is another issue.)

Actually, the banana, whizzed up in the coconut milk did the trick. So I guess

I can try that for the yogurt too, but there it doesn't bother me, since it is

just

for me and not something I would necessarily serve guests.

Mango is also very smooth and creamy like banana, if you can have a mango.
