I am baking for someone with diabetes. I did not want to use artificial

sweeteners, so I went to the health food store to see what was there. I found

" date sugar " made from dates, and " coconut crystals " made from coconut sap.

Neither would be good for diabetics in large quantities but I mixed a little of

it into erythritol (illegal) for flavor.

Now I would be the last person to eat this or use it on SCD, because too much of

a sugar load can't be good for the gut, but there was nothing illegal in it, so

being curious, I wonder if anyone has used date sugar or coconut crystals?
