Hey guys! I was browsing the BTVC website and found this bit of info. I think someone was asking a few days ago why sharp cheddar is occasional, while mild and medium are not. I found the answer =)Aged CheeseElaine writes:During the aging process (especially very old cheddar) certain chemicals are produced which could bother a person with a compromised immune system. I think if you go to a search engine, you may be able to get on the subject of aged cheddar and determine what the chemicals are that develop to give aged cheese its sharp taste. These chemicals might affect a sick person in a negative manner. Peace =)Alyssa 16 yo UC April 2008, dx Sept 2008SCD June 2009 (restarted)Azathioprine 50 mg 1x per dayPrednisone 35 mg 1x per day
