Sweeteners?

Hi!

I am trying to expand my "eat-on-the-go" foods and I want to try muffins etc. Can I make these without honey? What would I substitute?

I am diabetic and honey really sends my blood sugar soaring. Maybe I could just cut the 1/2 cup to 1/4 cup plus some saccharine, but I don't know how the recipes would react. Baked goods really like some sugar in them.

I use 1/3 a cup of honey in the brownies, and it is plenty sufficient. Maybe you

could use 1/4 cup of honey, and make up the difference with something like

applesauce?
