What would I substitute? I am diabetic and honey really sends my blood sugar soaring. Maybe I could just cut the 1/2 cup to 1/4 cup plus some saccharine, but I don't know how the recipes would react. Baked goods really like some sugar in them. Thanks for your help. Regards ...... Maybe you could use 1/4 cup of honey, and make up the difference with something like applesauce?
