I have found that it is easiest to avoid the kinds of foods that we're accustomed to that contain g or c ,n the beginning, rather than substitute. Introduce new foods that are not trying to substitute for g or c. In the beginning of this diet, it is just too obvious that you are not eating real pizza, bread, etc. I do find that cookies and brownies come out close enough to the wheat kind that you can get by with those. It is possible, but not easy. I've changed the way I cook to accommodate gfcf for most meals. Cutting way down on breads and using corn starch for thickening gravies, stews etc rather than flour. Also using corn starch for rolling my chicken in for fried chicken, so that I'm not making two meals. We all use the same margarine, potato chips etc. Snacks are nuts, fruits, frozen desserts that I make (those ice shavers are good). Once a week I make cookies or brownies or rice crispy-like treats or the latest: coconut macaroons etc. >-Is it an expensive diet to maintain (especially with others eating healthy >foods but not gf/cf foods)? It certainly can be, but doesn't have to be. If you change the way you feed the whole family , rather than trying to substitute, the cost is manageable. Believe me, if I can afford it, anyone can.
