My husband and I have been on the diet for about 2 weeks now.

What is the consistency of DCCC cheese, I can't seem to find it anywhere, but

not quite sure what I'm looking for, if I recall farmer's cheese is kind of the

consistency of ricotta or cream cheese. (can't find that either) What I am

really wondering is if yoghurt or kefir cheese would be a suitable substitute in

recipes for DCCC.
