Guest guest Posted April 6, 2010 Report Share Posted April 6, 2010 Some cookbooks use a certain brand of stock they have deemed ok. I do not recall the name. From Marilyn's post, it wouldn't be legal. I used to use a version of KB Chicken Stock which didn't list natural flavors, spices or anything. It specifically listed honey, chicken, salt, etc. I not recall which one that was--they have since switched up the labels and types. Last time I bought a box, I had to toss an entire chicken, carrots, onions, etc. because it had a funny smell. The chicken seemed ok, bay leaves (everything deconstructed!) and I decided something must have changed in their formulary because it was bad. I love that stuff but due to price and throwing everything out that time, I don't bother with it. Martha (for one) and several SCDer's have great stock recipes. I just boil the chicken with a bay leaf,onions, etc.and strain it really well. Freeze in portions in glass bowls, mason jars or sometimes freezer bags (saves room if you lay it down flat in the freezer).
