GAPs is based on SCD, but because C-M had her basis in autism, she automatically asks people to start dairy free. The intro diet does not have to include yogurt and cheesecake if you don't choose. My own intro was roast beef, roast pork, soft boiled eggs with butter, and steamed, peeled zucchini with either butter or shredded cheddar. The object of the intro diet is basic, easy-to-digest (for you) foods which will clear the deck and allow healing to begin. And GAPS also stresses eat all the fat in homemade stock where as I just read in a recent post here to skim fat Many people have trouble with the fat in the initial stages of the diet, but find that they can eat it later. Then you only skim the fat off the broth if you want to. In addition, so many people come to SCD convinced that healthy fats are unhealthy, and have been eating low-fat for years. Thus, it's better to re-introduce the fat gradually, so your system can develop the digestive fluids and handle the fat. The other thing to consider is that some people's systems are so compromised that they will never be able to handle the fat, so encouraging them to eat it might sabotage their healing. Aside from drinking bone broth with egg yolk and kobucha, I haven't taken the plunge yet (I'm not going to admit what I was eating while reading the book...) but SDC seems like a much easier way to begin. SCD has its issues when you're getting started. (Adjusting to making EVERYTHING!) The point is, you can get started, and then gradually tighten your controls, such as adding organic and/or pastured meats, cheese, dairy, and eggs, eliminating chemicals in your environment, and so forth. When I began, I used standard food from my local grocery. Now I'm using mostly organic and/or pastured, as much as I can afford or find. But, for instance, I'll typically buy conventional avocados because I'm removing that thick skin, and conventional avocados are (right now) $1.25 less per avocado than organic.
