Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 Okay, I finally did it! I recreated everything for my son's thanksgiving feast to send in to kdg. with him. Below is an easy pumpkin pudding recipe I concocted. It is GFCF, soy, egg, corn, rice, and virtually fat free. Enjoy! Pumpkin Pudding 6 T. tapioca starch 3/4 c. sugar 1 1/2 t. cinnamon 1 1/2 c. pumpkin 1 can (14 oz.) pure coconut milk (I used Thai Kitchen) 1 1/2 t. vanilla (mine was glycerin based) Mix everything together, except vanilla. Microwave until thick as pudding should look. Whisk every minute to avoid lumps, and also because it suddenly starts to thicken really fast. Cool and eat. Yummy! Guest guest Posted November 17, 2001 Report Share Posted November 17, 2001 I used plain pumpkin--Libby's--in the can (takes about not quite one 15 oz. can). This was very easy to make. It does form a hard " skin, " though. I don't know if it would help to cover it to prevent this or not. This is my own recipe; I was experimenting. My son loved it (and so did I)! You could use GFCF pumpkin pie spice, too, if you can find it, in place of the cinnamon. I didn't have any that I was sure was okay, so I just used Tone's cinnamon.
