It does look good -- just be careful, because finding unsweetened dried

cranberries is very, very difficult.

Sounds really great--I'm a huge carrot fan but also pretty advanced for some people with all the raw carrots and dried cranberries.

 

Thanks for posting, will give it a whirl.

Carrot Salad

Lemon flavored and honey sweetened, this healthful salad is spring picnic perfection.makes: 6 servings

Ingredients1/4 cup olive or canola oil2 tablespoons lemon juice2 tablespoons honey1/4 teaspoon of salt1 1/2 cups Stonyfield Organic Fat Free Vanilla Yogurt (for SCD use your plain yogurt and add a little legal vanilla)

10 medium carrots, shredded1/2 cup dried cranberries1 small red onion, chopped1/2 cup chopped almonds

DirectionsIn a small bowl, combine oil, lemon juice, honey, salt, and yogurt. Whisk until well blended. In medium size mixing bowl, toss carrots, cranberries, red onion, and almonds. Pour yogurt mixture over carrots and toss. Place salad into a serving bowl and serve.
