Occasionally I think that the consistency isn't quite what it's " supposed to be " but since I've never used agave I couldn't say for sure. I just keep an eye on the food when I bake it in case it needs less time to cook. Oh and I specifically substitute buckwheat honey for yacon syrup because it has a somewhat molassesy flavor. It's not a perfect sub but it works for me stacey > > 1. But I just ordered online Elana's " The Gluten-free, Almond Cookbook " and learned that she prefers the agave nectar in her recipes - I'm very bummed out about that.
