I successfully substitute honey for agave in all of Elana's recipes.

Occasionally I think that the consistency isn't quite what it's " supposed to be "

but since I've never used agave I couldn't say for sure. I just keep an eye on

the food when I bake it in case it needs less time to cook. Oh and I

specifically substitute buckwheat honey for yacon syrup because it has a

somewhat molassesy flavor. It's not a perfect sub but it works for me :)
