I peel them, use a vegetable peeler to sautee them and when I get down to the seeds, I penny slice them--kills me to throw half of it away. I only recently started eating zucchini though. In the beginning and probably for a long while in my case, I would peel, cook and deseed everything. The only exception was yellow squash. That worked fine for me from day one. The harder seeds (sesame, poppy, etc.) took a lot longer and I still have to watch those. Dried fruits like figs with a lot of seeds I basically avoid unless it's just a taste of it. Marilyn has always eaten zucchini from what I've read so maybe she can give a guesstimate on time. You could try a little bit and wait four days, try it again, repeat. See how it goes for you.
