Do you find the nuts easier to digest soaking and dehydrating them? We did. What all have you tried drying?I got an Excalibur =) Five tray though, not nine tray. It seems to work great, though I haven't used it a whole lot yet. So far I've just done almonds and pecans in it. The pecans seemed to dry really well, but even after 24 hours at 105* the almonds still seems a little rubbery/soft. Not quite hard and crispy. Do you think this means I need to dry them longer, or is that just how they are? NT recommended no higher than 150F, so I usually put mine at about 135F. I know that it isn't raw at that point, but when you consider that all nuts are 'pasturized' before you ever get them, I am not sure if the slighter higher temp makes a difference. I would definitely dry them longer to see if you can get the crunch, if not, then I would try a slightly higher temp. If you don't store them too long in the fridge, slightly rubbery shouldn't be a problem. If you do a big batch, I would freeze part so that they last longer without a mold concern. Also, try leaving a level blank above the almond trays and make sure the almonds are close to the top to see if that helps. I do about 16 cups of nuts (I usually do almonds, walnuts, and pecans) at a time and it takes about 6-8 trays. The almonds usually take the longest, depending on how long I soaked them. I think I'll let them go for a few more hours and see if they get crunchier, and if not, I will try the higher temperature. Especially since I'll probably be making muffins out of them anyways =) The noise isn't too bad, although it bothered my mom a bit in the kitchen. It's now in the sunroom, so it isn't very obtrusive. My cat didn't like it at first, but I think she's used to it now.
