Guest guest Posted May 18, 2010 Report Share Posted May 18, 2010 I make baked navy beans regularly. I soak them for 10-14 hours, changing the water and rinsing half way through. Cook in water covering the beans by an inch for 2 hours, partially covered. Rinse beans after they are soft enough. While the beans are cooking, saute 1 medium onion in olive oil until brownish and very soft. The onion should be chopped fine. Add 2 finely chopped, deseeded, peeled tomatoes and cook until pulpy. Add salt and a tbsp. of honey, pepper if you like. Add cooked beans to this mixture as well as half a cup of water and cook on low heat for 30-40 minutes. I started seeing an acupuncturist/traditional chinese medicine practitioner who suggested something really helpful related to tomatoes: No sour food. She said, think about it. Have you ever had a soar in your mouth? What makes it hurt? Lemons - bad. Anything sour - not so good. I suspected tomatoes were causing problems but I never thought about it that way. I'll try adding them in later when I'm more patched up inside. Thanks so much for the recipe!
