Guest guest Posted May 5, 2010 Report Share Posted May 5, 2010 Hi All I recently wrote to the makers of the Yogourmet yogurt maker to ask them whether all the lactose is removed if the yogurt is incubated for 24 hours and also what are the effects on the probiotics after 24hrs of incubation. The answer I recieved is below:- Sir : *** Answer 1 *** A small percentage of lactose will still remain after a 24 hours incubation period. It is actually not possible to get rid of all the lactose. *** Answer 2 *** (provided by our laboratory manager) Regards yogurt made with the Yogourmet CBA freeze-dried yogurt starter with probiotics on a 24 hours incubation period. It is not a temperature problem, it is a pH problem. With a longer incubation period than the one required (12-15 hours), the pH gets lower (more acid) and the probiotics have difficuly to tolerate acidity. It is rather concerning that 24hrs of incubation reduces the probiotics although they don't say whether some, most or all are effected. It should be noted that the information was provided by their laboratory manager.
