I make stuffing with gfcf bread that I have made myself (Noah's bread works great) or corn bread if you like corn bread stuffing. All you have to do with both, is dice it up, et voila`! you have your stuffing. For seasoning, I use chopped parsley (can use all dried herbs if you like), some dried basil, bacon cut up in little pieces, that I first let stir fry in a pan before adding the rest so it releases the fat, and I use that fat instead of adding margarine or butter; I add celery, onions, pecans, salt and pepper, and whatever you like. I also make stuffing with chestnuts that I previously have boiled and peeled, then I omit the pecans. This has always been my recipe, the only thing I'll be doing differently this year with be the gfcf bread part Good luck. PS I have no answer on the turkey part, b/c I am in doubt myself.
