" Hi, I want more and more of anything high in carbs, but this recipe I changed to SCD from a coconut flour recipe website doesn't seem to trigger that reaction. Maybe the coconut flour makes it low enough in carbs? Coconut Flour/Apple Muffins 1/2 cup coconut flour 3/4 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. cloves In medium bowl combine above. In small bowl combine: 1 tsp. lemon juice (or vinegar) 1/3 cup coconut oil 1/4 cup honey 3 beaten eggs 1 1/2 shredded apples Combine dry and wet ingredients and bake at 325 for about 25 minutes. Use muffin tin lined with paper cups. Makes 12. I have also added cranberries for a slightly different taste. Terri S.
