Her doctor believes its Crohns, but all other diagnostics point to UC or are inconclusive. Regardless, it is clear that she was anemic, and suffered through all the IBD symptoms. She is in remission now based on strong steroid and ASA medication, but we can see the side effects of the drugs. Looking for an alternative to complete reliance on the meds, we stumbled on Elaine's book this weekend, and are committed to getting our daughter healthy and on the SCD. Having just gone through Elaine's and 's books we are daunted not by the cooking but by our daughter's allergies. She has tested positive for allergies to: Chicken, Fish, Turkey, Tree Nuts, Peanuts, and Sesame; (although she is ok with Eggs cooked in pancakes, bread, cake etc). Which brings me to the diet suggested for the SCD, which is heavily reliant on Chicken, Fish, Nuts and Almond Flour. While we have introduced her to pork, we are mostly chicken and fish eaters. Our younger son is hungering for fish and chicken and we will not be all able to maintain SCD throughout our family. Is this been the norm for others with children on the SCD? We are thinking of substituting almond flour with coconut flour, and possibly chestnut flour, but are unclear if this is a viable substitute or if someone can suggest other SCD alternatives? She has done ok in the past with Sunflower seed butter (Sun butter). And we do not know if this is SCD compliant as a substitute for peanut butter? We made two batches of SCD yogurt over the weekend (used Total Fage (Greek) and Siggis (Icelandic) as starter) and used it this morning to give her a shake. We believe these work, and as newbies feel extremely proud of our accomplishment. Note that Siggis makes for a cheesier taste, but has all the 3 SCD-recommended bacteria. My wife and I feel a little overwhelmed, in that it appears our choices for SCD are even more limited than for others on this diet. Am hoping that if our daughter responds to the SCD, in time we will be able to introduce some of these items back into her diet, but in the meanwhile, any suggestions, advice, encouragement any one on this list can offer with regard to alternatives to SCD-recommended list of essentials would be received with much relief and gratitude.
