But, I'd rather get raw and toast, season my own. They seem fresher. Guess the moderators will have to weigh in. I know we're not supposed to eat roasted nuts that are sold in a mix because they are usually roasted in a starch, but what about roasted nuts that are NOT mixed? Like for example, a bag of roasted and salted sunflower seeds? Or a bag of roasted and salted cashews? I'm sure this has been asked before, but I'm sorry, I don't remember! I wonder why they use a starch coating for mixed nuts and not for non-mixed. I'm sure they are better when you roast them yourself. I just wanted to try and make my own sunflower seed butter, and I couldn't find any raw, non-salted sunflower seeds. It has a very strong flavor to me. Just check the nut butter aisle if you are interested. Debbie 41 cd Here's the thing. When they roast nuts for butters - that's legal, because then they process them into butters right away. There's no upside in keeping them in storage until they process them. When they roast nuts to sell them in packs, there's a very large chance that at that point they spray them with some kind of preservatives, because then they package them to sell and who knows how long they'll be on the shelves. Processing aids, however, don't have to be listed (like if the company uses cornstarch to keep slices of cheese from sticking to each other). I decided I'm just going to contact the company to see if they have any added ingredients that are not listed in their ingredients list. Seems like the best way to know for sure. I do find it a little confusing though that the book outlines nuts sold in mixtures are not allowed but doesn't mention anything about roasted and salted nuts not sold in mixtures. (Unless I overlooked that somewhere.) But then I guess it doesn't make sense to me why nuts that are roasted and salted in a mix or not would be processed any differently- why would there be added starched in mixed nuts versus not mixed?
