I finally bought some yesterday out of frustration.  It was a bunch of 3 big red ones with the tops for 1.99$ (for some reason I thought they were very $$$).

 

So, I have read one recipe that says to add olive oil, salt, pepper, rub into beets, wrap tin foil around them, place on a baking sheet, bake 1hr 15 min at 350F.

 

Is this the best type of recipe to have sliced beets to go on a salad or with beans or something like that?  Not really a side, more like a condiment and I need the iron.

 

I saved the tops (was I supposed to cut them off?), the leaves and the tips (again--you cut them off, right?) for stock.

 

Do I cut off the outside before cooking?

 

Next question.

 

I saved beet leaves, carrot green leafy tops (lady at the store said she does this), hard asparagus tips and some other stuff to make veggie stock.  My mom says it's going to be weird.  Does this all go together or no...?

If you want veggie stock, add more than beet tops.  Then no  need to throw it away.   Carrots, onions, celery, etc, for a rich

stock.  

I always add beet greens to borscht - beat soup - although

it's good in chicken soup as well, but not as the only vegetable.  

It adds complexity, but you need more than just that.

I love boiling beets. It's real easy, easy to clean up, and I can always drink the water. I follow great simple cooking advice from this page (I always start with them):http://www.vegancoach.com/

I'm trying to like beets. So far I've just peeled them and steamed them and then tossed w/olive oil, s & p. I can't get past the fact that they taste like dirt! Am I doing something wrong? Anyone have a good and simple recipe for beets?

gardener so I *know* what dirt tastes like. Plus, the next day, in the

toilet bowl is that beet-colored horror (at least for me) that nearly gives me

a heart attack!

But, I like them pickled <grin>

If they taste like dirt, you are cooking them wrong.roast them in the oven, until all the sugar in them caramelizes. then you can eat them that way, or with a simple salad dressing. peel them and steam them.. a lovely treat!enjoy!:) Lol – I think they taste like dirt too, and I’m a gardener so I *know* what dirt tastes like. We have cooked them pan fried, our you might call it sautéed.  We cube the beets, put a little oil in the pan and cook similar to a french fry. There not too bad.-- CD 7 yearsSCD since 6 Aug '06
