Most of the recipes I've seen call for Korean red pepper flakes, and I'm wondering if you can substitute with legal ground cayenne or chipotle pepper, or if red pepper flakes are even legal. Some are. But you can just use spicy red pepper. > > • Is rice wine vinegar legal? I've seen both answers. It's reported as no in the legal/illegal list but Eat Well,Feel Well, which Elaine wrote the intro for, uses brown rice vinegar. Let us know how you do. I've thought about doing this, but I've found some commercial legal kim chis and feel comfortable using those. Mara
Guest guest
I bought a crock (I think it came from a slow cooker) for $1.50 at a thrift store and my sauerkraut comes out perfect. I cover it with an oven turkey bag with water in it and there is no spoilage or smell that escapes while fermenting. - I've never had kim chi before, but I'd like to start adding more fermented foods to my diet. As far as sauerkraut, does anyone know where I can get a cheap jar? I briefly looked up fermenting crocks and don't want to spend that much money. Guest guest
Ooh, what brand/store did you find the kim chi? It would be nice to try that first to see if I actually like the taste of it before I try making my own. Thanks! Guest guest
Cool, maybe I just have to be inventive with what I use. Stupid question, but where do you get an oven turkey bag? Do they sell them at the grocery store year round? Thanks, Amber > > I bought a crock (I think it came from a slow cooker) for $1.50 at a thrift > store and my sauerkraut comes out perfect. Guest guest
Thanks, Alyssa! I ended up finding some quart mason jars at Meijer for pretty cheap. I was hoping for larger ones, but I actually think these will work best for now.
