You can stuff a corn tortilla with anything you want,

roll it up and deep fry it so it stays together. My

son likes chicken or beef. You could sneak any pureed

veggies in there as well. To be honest, I just buy

them. Trader Joes has some that last time I checked

were GFCF. There is a mexican restaurant down the

street from me that will make them as well. The only

thing they fry in the oil in corn tortillas for chips

and tacos. Costco has a big box of 60 but I have

never checked the status on them. I should because

they are only $9!! Good luck, they are definetly a

hit around here.

Trader Joes Chicken Taquiots RULE!

I take the corn tortillas and fry them in oil for about 5 seconds on each

side, then fill with shredded chicken, mixed with a tiny bit of Imagaine

creamy potato and leek soup, or the cream of mushroom, to hold it together.

Mash it with a fork to make it mushy like the store bought ones. Then place

in the center of the tortilla and roll up jelly roll style. Then bake at

350 for about 15-20 minutes. Freeze leftovers and you can microwave those.

I buy mine from a local tortilla factory. They only make corn tortillas.

Look in the yellow pages-I bet you have one nearby. I gre up in Houston

and had several to choose from-but even in New Orleans these exist.
