Too often, so-called " smoked " cheese has the flavor added, not

by actual smoking, but by the addition of smoke flavor. There are a

couple of smoke flavors which some people believe may be legal, but I

don't trust smoke flavor -- ghu knows what they put into it.

You would have to determine how the cheese was smoked, and whether or not

any illegals were introduced during the procedure.

Gouda is my favorite cheese and I personally prefer the flavor of the unsmoked

over the smoked.

I get mine at Whole Foods in Atlanta. it's a Dutch gouda by the name of robusto.

It is aged over 8 months and so delicious!

I'm sorry I don't know about the legality of smoked Gouda.
