Mine are 2.5 yrs old and have adjusted well to " waffle " peanut butter and jelly sandwiches. I multiply my waffle recipe by 6 when I make it. That usually lasts me just over a week. Under cook them a little when you make them. I freeze them as soon as they cool. If you take them right out of the freezer and put them into the toaster they turn out pretty good. I have found that if I under cook them a little in the waffle iron that they don't become bricks so easily. And, if they are bricks we have peanut butter & jelly waffles on a plate with syrup. talk about sweet. my kids love it! Other quick things we have are oscar meyer hotdogs, hormel pepperoni, Quaker mini apple cinn rice cakes, rice crackers, any Del Monte fruit or veggies are approved. I also make lots of chicken nuggets when I make them and greeze them. Many Walmart and Orieda brand french fries are safe. Those together with a canned veggie makes a emal for my kids. I bought powdered calcium from Kirkman's. i add this to about anything I cook or bake. My kids also like " tuna dip " ( call anything dip & they will eat it.) Which is just tuna fish salad with crackers. Rice pasta with meat sauce is also becoming very popular in our house. I swore I was NEVER going to pay $3 for a bag of pasta, but after trying to make my own $3 is not a bad deal. Hang in there. It gets better. We are only about 8 weeks into the diet and are doing pretty well. My husband works full-time and I am home with the girls, but I also hate to cook. My husband and I eat a lot more salad than we used to. The girls won't eat salad yet & he & I don't eat hotdogs. So when the girls have a " thrown together " meal DH & I add some pepperoni or left over meat to our salads and WALA, dinner. I give them bananas and potato chips (Lays). You could make their sandwiches ahead or ask your husband to make them. I sometimes give them leftovers from the night before. For dinner, I am in love with my Crock Pot...I use it at least 3 times per week. If you get that set up ahead, it will be mostly ready when you walk in the door from work. Maybe he could plug in the rice cooker right before you get home or microwave potatoes to go along. I do alot of chicken in the crock pot and pork and beef. Last night I tried chicken this way and it was good: put uncooked chicken in the pot, covered it with a small can of tomato sauce (tomato soup is NOT gfcf), dried diced onions, garlic powder (garlic salt is often not gfcf), Italian seasonings and salt and pepper. I also added basil from my garden. Then I just slow cooked it and it was great! Good luck! You will get into a rhythm with this diet...it just takes awhile. Guest guest Posted October 9, 2001 Report Share Posted October 9, 2001 Make a pasta/chicken salad- cook any gfcf pasta (I use lentil bean pasta), add chiccken (good way to clean off the bones from a roasted chicken), and some GFCF mayo, refrigerate and VOILA!! LJ loves this. If you eat tuna, you can use tuna instead of chicken. I make the meatballs (throw organic mix vegie baby food, flaxseed powder, calcium powder, any thing else you want in) and nuggets on the weekend and freeze. Just heat and serve. I microwave them for 33 sec, cut and serve. I send these to school for lunches as well. I also make PB sandwiches ( I buy white rice bread, Jiff PB and Polander grape jelly ), I make these usually right before I am ready to serve it because the bread is kind of on the hard side. It took a few months for Nik to eat this bread but now I can't keep it in the house he eats it so fast. I buy Applegate hotdogs and wrap in wet papertowels microwave for 1 min cut and serve with lay's chips. I usually make a Sunday dinner that can be reheated during the week ( sauce and meatballs, meatloaf, ham, etc.. ) Some nights I make french toast for supper and Nik gobbles it up.
