Guest guest Posted April 15, 2010 Report Share Posted April 15, 2010 In order to make yogurt, you have to add some honey or dates or both to the coconut milk, to give the bacteria something to feed on while they reproduce. about 2 tb to a quart or so. Then proceed like normal, mixing in starter, and let ferment at 100-110 for about 8 hours. Then - this is optional, but it tastes much better this way - you can add a box of gelatin to the yogurt - (following the gelatin instructions - add water, then after it hardens, let it melt, etc. and then distribute to your yogurt containers) and that gives it more of a coconut yogurt custard taste. Then refrigerate until it cools. The yogurt will separate - shake it occasionally - but once it is custard, you can simply stir it together and it all tastes fine. Mara > I would like to make my own yogurt with coconut cream concentrate or unsweetened coconut milk. I have a horrible history of digestive disorders and would appreciate any help or recommendations as I cannot tolerate dairy.
