In order to make yogurt, you have to add some honey or dates or both to the

coconut milk, to give the bacteria something to feed on while they reproduce.

about 2 tb to a quart or so.

Then proceed like normal, mixing in starter, and let ferment at

100-110 for about 8 hours.

Then - this is optional, but it tastes much better this way -

you can add a box of gelatin to the yogurt - (following the

gelatin instructions - add water, then after it hardens, let it melt,

etc. and then distribute to your yogurt containers) and that gives

it more of a coconut yogurt custard taste. Then refrigerate until it cools.

The yogurt will separate - shake it occasionally - but once it is custard,

you can simply stir it together and it all tastes fine.
