I use Food for Life Bread. I defrost it and keep it in the refrigerator. It

lasts a long time in the frig- at least a week. sometimes you have to cut the

slices apart to separate.

It is frozen because it is VERY prone to mold. Thaw it on the counter for

an hour or so, run a knife between the slices and remove what you need.

Refreeze the rest. Toast the slices you need, lightly if you don't like

toast, and twice if you do.

I was told by our local hfs owner that he receives the bread frozen and it

should remain frozen until the week you want to use it. He also said that

it's best not to refreeze it if you buy it at a store that lets it defrost

and just refrigerates it. (Stores who deal in large volume can do this) He

said that because there is no gluten refreezing it and then defrosting it

make it even more crumbly and almost impossible to keep it in one piece.
