Yeah - everyone with UC and CD and probably most of the various IBSs have leaky

gut. Because of faulty immune systems.

UC people specifically have it, because they are lacking this peacekeeper

protein

cell in the gut which is supposed to disallow the pathogenic bacteria from

penetrating

through the gut walls and keep it contained in the gut so that it can be

shepherded

out - and then the fact that these pathogenic bacteria go where they are not

supposed

to causes the immune system to react and attack itself, thus setting off the

whole

auto immune response.

Has your naturopath said anything about dairy intolerance - casein? I'd

probably

stop most dairy for now - and just use ghee - at least for a certain period when

you are healing. After that you should be able to reintroduce.

Thanks Mara for the explanation about leaky gut in relation to UC. I didn't

know all that. I did an elimination diet back when I started with my naturopath

and all dairy was revealed to be a problem for me, but of course I just assumed

I must have an intolerance to lactose. She didn't mention a possible casein

intolerance, however, after consuming the SCD homemade yogurt and having issues,

I'm thinking it's a possibility. I may try goat's milk yogurt (homemade) many

months down the road when I'll be [hopefully] feeling better. For now, I guess

it's just going to be zero dairy, except for ghee!

Thanks . I figured as much that " fanatical adherence " is necessary- I'm

not going to take the supplements. And you're right, there does seem to be SCD

legal alternatives- just takes more research on my part to find them.

I haven't seen the MD yet regarding this issue (well, I had mentioned it in the

past when I was in worse shape and my bms/stools were totally out of whack and

never anything near normal colour/consistency/frequency, etc.. and nothing much

was said about the liver or gallbladder- just the suspicion of UC). In general

I trust my naturopath much more, since she spends much more time with me (and I

have unlimited email access to her, whereas it takes several weeks to get a 5-10

minute appointment with my MD...). So I brought it up with her and she told me

that if I am experiencing certain other symptoms which she listed then I should

get some bloodwork done and an ultrasound. She did say that although it's not

an emergency per se, that it can be quite serious. So far so good, I don't have

the other symptoms and my stool colour has returned to normal, though I'm

continuing to monitor things and I'm recording everything.

You can make coconut milk yogurt with gelatin - which is really delicious.

In a few weeks, I've become pretty addicted to it.

At the moment, I'm in the no dairy club, too - not even ghee. So, welcome.

Make coconut milk - but add honey and or dates - I use both - so the

bacteria have something to eat.

Then add starter to coconut milk as you would for regular yogurt - only

don't boil the milk first or anything - just make it right after you have

seaparated out the milk and ferment in normal fashion for about 8 hours.

Shake the coconut milk up a few times during this process in a mostly

vain attempt to keep it from separating while fermenting. When it is done,

it will be even runnier than goat's milk - but the texture is a little different

than when you started. And so is the smell. If you taste it at this point, it

is not delicious, and pretty much tastes like the nut yogurt used to. Not so

yum.

When you are finished fermenting the yogurt, shake up the yogurt again

then add the gelatin. Follow gelatin instructions - add some water to the

contents of a box of gelatin and let the powder gelatinize thoroughly, which

takes

a little while - when it has become gelatinous, melt it over very low heat (or

on

top of a double boiler if you prefer). Then add this to your yogurt - do not

taste

the yogurt at this point because it will discourage you (again!). Shake it up

again -

realizing that it will probably separate anyway. Oh well. Add some vanilla,

too.

Then wait a whole bunch of hours or overnight (depending when you

started the cooling down period - I think 6-8 hours is pretty key) and

taste your coconut yogurt gelatin. You'll pretty much have to mix the

yogurt cream into the yogurt water, but the whole thing is really good. I eat

it plain and with fruit.

That's the method I use!

Course the low tech method might be why it fails nearly every time. <g>

To the blender - and let them blend with the coconut

before straining.

about 2 tablespoons a quart or 1 Tb/I date or

more to taste - not too much less as you need

some sugar for the bacteria to eat.
