If you can't find it, tell me and I'll get the page #. Anyway, I made it without the tahini and less garlic and my child ate quite a bit with tortilla chips to dip. Doesn't taste like eggplant. What about cucumbers and dip in something? They are pretty mild tasting. How about baked yam with lots of marshmallows, brown sugar, butter? Guest guest Posted September 21, 2001 Report Share Posted September 21, 2001 My 10-yr old has refused to eat anything other than bread his whole life, and I got pretty good at putting sweet potatoes, pumpkin, banana, and other fruits and vegetables in muffins, quick breads, biscuits, etc. I even made him a chocolate-sweet potato cake for his birthday every year. Also, we'd substitute applesauce for the oil in all our baking. Since going gf, however, he does not like the applesauce in the baked goods. I'm getting ready to do a lot of experimenting here, so will let you know how much applesauce I'm able to re-introduce (I'm figuring half applesauce/half oil might work). Also, I mixed up some gfcf flours and keep them in a half gallon jar and have been using the mix to substitute for wheat flour in " regular " recipes. It's been pretty successful so far, and the children agree those are the best recipes yet. Here's my mix: 1/2 cup brown rice flour 1 1/2 cup garbanzo or garbfava flour 2/3 cup potato starch 1/3 cup tapioca I add 1/2 - 3/4 tsp. xanthan gum to the recipe. I mix up 3 cups at a time, use what I need, then add another 3 cups of the mix. The half gallon jar is a good size, as I can just shake it up and get a good mix. Hope this helps someone! Guest guest Posted September 23, 2001 Report Share Posted September 23, 2001 Try frying eggplant in your favorite GFCF chicken nugget mix. Your kid will love it. I have had adults ask me for the recipe too because they liked it so much! You'll also want to soak the eggplant in water for 15-20 min prior to coating to take the bitterness out.
