I know with some oils (and I think olive is one of them) definitely the first pressing and maybe the second are just pressure. But at some stage after that they use chemicals to extract more oil and those are the lower grades. And I for one to not want to ingest whatever that chemical is! Ohh I think I get it now. So it doesn't necessarily make too much difference healthwise if an oil is virgin or not, since that's just if it was the first or second or etc... round of oil pressed out of whatever. I just have to make sure it's extracted without heat and chemicals and not further heated or chemically treated after it's extracted.
