And me 3 thick chicken breasts. about 1.5 pounds Olive oil 1 Tsp. salt 1/2 Tsp. pepper 1/8 Tsp. cayenne (optional) 1 Tsp. basil 1 Tsp. oregeno or 1 Tbs. chili powder in place of basil/oregeno 1/2 cup honey 1 Tbs apple cider vinegar (ACV) Cut chicken breasts in half vertically. Heat oven to 350. Heat a large cast iron or heavy skillet over medium to medium/high heat. Drizzle oil on both sides of chicken. Mix seasonings in a small bowl. Taste and adjust salt/pepper/cayenne to your liking. Sprinkle evenly over both sides of chicken. Cook chicken 3 minutes per side. Meanwhile, mix honey and ACV in a small saucepan over low heat until combined. Taste it. You might want to add some extra ACV to cut the sweetness. Next time I will. Brush honey on chicken and place in the oven. Cook 10 minutes. Turn chicken, brush on honey again and cook 5 more minutes. The chicken should be done at this point. Remove to a warm plate to stop the cooking process. Serve with remaining honey mixture. The chicken came out perfectly cooked and juicy. Winner winner chicken dinner... =D I made brussel sprouts to go along with it and they were good dipped in the honey sauce. I think this combo would be good on pork chops too.
