Some of this I have just addressed with my post to Jody so I will avoid repeating. Your evaluation is based off the Food Pyramid model which has been proven faulty and should be thrown out. This Food Pyramid has done more harm and essentially driven the past two generations into insulin resistance diseases. It is not coincidental that the rise of insulin resistance diseases tracks perfectly with the introduction of the Food Pyramid 30+ years ago. I will comment that the diet outlined in Life Without Bread is not, and emphasis not, an Atkins diet. There are many similarities and actually Atkins apparently used some of Dr Lutz's research in formulating his approach. Some of the key differences which are very important are the need for a gradual reduction in carbohydrate levels and not the cutting out of all carbohydrates. Shortly I will post some ways I was able to get to eat more fats and protein. Also, I would recommend that your husband consider this diet rather than Atkins.
