Guest guest Posted May 14, 2010 Report Share Posted May 14, 2010 Hi id love to be able to eat bacon as i too need more calories, Now sorry for the stupid question im a 26 yr old male who knows nothing about cooking as im in the learning process of all this scd stuff. Anyway in elaines ilegal /legal list she has "Smoked Bacon" thats been fried very crisply is allowed once a week. Now theres been a tasty pack of rashers looking at me when i open my freezer door for some weeks now that says smoked bacon so can i eat this id love to know so i could have it with my scrambled eggs one morning. Guest guest Posted May 14, 2010 Report Share Posted May 14, 2010 Mark, Bacon- and rashers- defined as sliced pork- is legal depending on what is added to it. Remember- pork- the meat- is legal. The problem with sausages or any kind of processed cured pork is what is ADDED to it. Most sausages are illegal. Many people on this board make their own, but I would advise waiting to do this and learn the basics first. Many hams and bacons are also sugar cured which would be a problem on SCD. It is possible to find bacon and ham that is not sugar cured. I am sure someone here can tell you the source of legal hams and bacon. I don't eat it so I don't know. Be vary careful to read the ingredients of anything you eat that is processed. Bacon, rashers, ham- all of it can be cured with added sugars and flavorings that would make it illegal. Hope it's legal! The easiest way to cook it is to line a cookie sheet with aluminium foil, place bacon strips so they don't overlap and cook in a 450 degree oven for about 8-10 minutes or until your level of crispness. I save the bacon grease for cooking other things like green beans, cabbage, scrambled eggs in a cup in my fridge. If you find it cooks to fast and you're burning it at 450, drop the temp to 350 for a minimum of 15 minutes. Some mornings, I use the 350 degree temp if I'm going to jump in the shower. There is no bacon grease mess on your stove and it cooks evenly. Avacado: there are so many things you can do with an avacado. First, take your knife and cut all the around lenghtwise (from top to botton) going all the way to the pit. Twist the avacado to separate the two halves and pull apart. Take a sharp thick knife (like a chef's knife not a steak knife) and hit the pit with it. The knife should stick in. Hit it hard so it has a good grip. Twist the knife pulling the pit out. Take a large spoon and push it between the avacado meat and the skin until it's all the way under. Turn the avacado to loosen it and the whole half should just pop out. It took me several tries to master this technique, but I have it down pat now. Avacado is great to add to a smoothie to give it a rich smooth texture. Especially if you're banana free. You can slice the avacado and sprinkle it with lemon/lime juice, salt and pepper. You can mash it with tomato, garlic, lemon/lime juice, salt and pepper, and cilantro to make a yummy guacamole. If you have a small food processor you can process it with a little lemon/lime juice, salt and pepper until super creamy for a mayo replacement. Mmmm chicken salad tastes to good with avacado mayo. Just make sure you always add a little lemon/lime juice if you aren't going to eat it all right away because, like bananas, they do turn brown.
