My digestion handles pecan flour better than almond, so I never use more than 30% almond flour in any recipe. And I have to limit myself to one serving per day of a nut flour muffin or bread or cake. I think it has to do with the density of almonds vs. pecans, but I haven’t looked into the technical reasons [grin]. Kim M.
