I get my son beans because they are the only thing safe at 2 of the places we eat out at regularly. But beans are very advanced. Many (but not all) people find themvery hard to digest even with 12-24 hour soaking before cooking until they have been on the diet for a while. It is not recommended for 3 weeks in - not least because you don't want to screw up your progress - which does happen at times when you eat food that is too advanced. I think it's because we have to soak our beans, which changes the chemical structure of the bean making it easier to digest. I think it might somehow get rid of some of the carbs? Maybe this folk wisdom of beans is with the standard American diet that fed plenty of gas producing bean lovin' bugs in the intestine? Now that your gut flora is different- maybe the response to beans is too. People probably ate beans with hot dogs, corn bread and plenty of gut feeding starches? I haven't tried beans yet, but I will keep this in mind when I do.
