I'm not sure if this is the right starter, because yogourmet also makes a starter that contains bifidus (in a blue package according to their website) - and the picture of the yogourmet starter on the BTVC official website (and on Lucy's kitchen website) is different. What does the right one say on it, and what does it look like? I sure don't want to end up with the one containing bifidus. The correct Lyosan should say Yogurmet Freeze dried yogurt starter , it is a white package. The higher the milk fat the less tart the yogurt will be. So, @% yogurt is less tart than 1%, Whole milk is less tart than 2%etc.. and yogurt made with cream will be the least tart. " I am able to use ordinary unflavored cow yogurt (Astro in Canada) as a starter but tolerate the actual yogurt done with goat's milk. I do even better with only 2% butter fat in the goat's milk and the only thing we have been able to figure out is it may be because smaller fat globules hold fewer toxins. That's just a theory. Since I switched to the 2% I can tolerate a lot of yogurt (2cups at least daily.) Children may need the extra calories more found in the 3.8% goat's milk. Carol F. SCD 6 years, celiac .. The answer is no, they won't. You need the other two strains... the s.thermophilus and the l.bulgaricus... to do the fermentation work. sorry... One ounce per batch? or is there more than the site says? Seems disproportionately pricier than using Dannon/Fage yogurt as a starter. Am I missing something? From the BTVC website: " Pour a little of the cooled milk into the yoghurt container and take a generous desert spoon of starter yoghurt or a sachet of starter powder.
