I don't know the exact conversion details--I kind of wing it, and rarely use it by itself (I decrease the honey so it's not so strong tasting). If I'm making muffins, I'll make banana muffins so the bananas are the sweetener. I also have used applesauce (as of two days ago) successfully, although next time I'll do half applesauce half honey. I think if you cut the honey with fruit, you really just taste the fruit but get the sweetness of the honey. Guest guest Posted May 17, 2010 Report Share Posted May 17, 2010 Hey Lori, I HATED the taste of honey when I first started SCD too so I understand you (and your daughters) frustration. What I eventually figured out was that it was a specific flavor in the honey that I didn't like - the flowery flavor. So the regular honey that I bought at the store (like clover) grossed me out even when it was baked in something because it was all I could taste. Oddly enough, the place I figured this out was at the MD Renn Fest. I went to one of the stores (The Bee Folks) and tried each type of honey. The two that really turned things around were Lavender honey and Meadowfoam (a bit caramelly and a bit marshmallowy). Raw honey also tasted *really* good to me (easier to get from a store, though I'm not entirely sure that's recommended for SCD). Four years later, I still don't enjoy flowery honeys but I don't mind them as much. Instead I just use the stuff I buy from the Bee Folks. I think I also recently enjoyed rose honey and tupalo (found in some random local store, though I've seen the latter in my local health food store). So you might want to try a less flowery honey and see if she likes it. stacey > > Does anyone have a good substitute for honey in the recipes?
