What you want to avoid with carbs is the quick insulin response to a sugar load. Honey and dried fruits are likely to do this. Apples not as much because the sugar is combined with the fiber and is not as concentrated as in honey and dried fruits and fruit juices. Another way to avoid this is to combine the apple with a little nut butter, as the protein and fat would slow down digestion a bit. So, yes don't overdo fruits, but a snack of apple with nut butter would be fine. Fruit juices are easily absorbed sugars, so don't use these. Interesting reading on this subject is the The Schwarzbein Principle. Note that her diet plan is not SCD legal and she has a website for personal consultations (costly). She also advocates for hormone replacement therapy for everyone- controversial. I'm not advertising for her, but the discussion on metabolism and cholesterol is interesting, especially the relationship between carbs, insulin, and cholesterol. Good Calorie/Bad Calorie is a great discussion as well. Exercise is key here too. If you are not active, even a brisk walk will help. For low carb snacks I do take a cooler with blue ice. You can freeze hamburger patties. I pack those with some hard boiled eggs for snacks. PJ > I have genetically hight cholesterol. Let me be clear: I have high cholesterol totally not caused by scd. However, I have now been tested, and it turns out that there is damage. Cholesterol has calcified in heart blood vessels. The score they look for in this heart scan is zero-- mine is 438. Not so good.
