Split reds would be your best first bet.

Brown/green whole ones would be next.

I'd avoid the dark green " French lentils " as, over the years,

I've seen people have issues with them.

I make a lentil-chili which I conserder to be quite good.

If you can tolerate some spices and seeds you might want to try one of my

Hey Raj,

Congratulations a very nice looking website. That mango kulfi

recipe looks great - makes me wish I were doing

dairy at the moment.

Your lentil chili rocks and got me through a weekend at Girl Scout camp last

year.

=D

Here's Marilyn's chili recipe:

Brown 3 pounds lean beef, with one yellow onion and several fingers of pressed

garlic. Drain off fat, if desired. Add 2 46-ounce cans of tomato juice, 2-3

tablespoons legal chili powder, 1 tablespoon cumin. Stir well. Add one pound

lentils, previously soaked. Simmer until lentils are tender. Serve topped with

lots of shredded cheddar cheese.

The cumin, chili powder, onion, and garlic is all approximate. I guess you could

use navy pea beans instead of lentils, but Harry doesn't like them and does like

the lentils.

This mix freezes very well, and reheats easily.

***I used navy pea beans because that's what I had on hand and they held up

really well in the chili***
