These were easy to make and quite good. Put in a plastic bag andplace in the fridge untill firm. Roll out dough on rice floured surface, cutint rectangles{or cookie shapes}Place on ungreased cookie sheet smear jam orjelly on half of cookies place a cookie without jam on top of one with andbake in oben for 6-10 minutes or till lightly browned. Make sure to ponchthe edges closed before baking to prevent jelly from leaking out.. Bake at425.This dough makes very good sugar cookies too. I freeze a roll of it sliceand bake as needed. And I like this recipe Graham Crackers or Cereal Bits (GF, DF, EF, NF, CF*) copyright 2001, Kathy Przywara, all rights reserved 3/4 c margarine 1/4 c honey 1 tsp vanilla 1 c light brown sugar 2 c brown rice gf flour mix (below) 1 c brown rice flour 1 tsp xantham gum 1 tsp salt 1 Tbsp baking powder 1 tsp ground cinnamon 1/4 c (for crackers) to 1/2 c (for cereal bits) water Cream margarine and sugar. Beat in honey and vanilla. Sift dry ingredients into separate bowl. Stir into creamed mixture alternately with water. Mix thoroughly once everything has been added. For Graham Crackers, dough should be soft and will be sticky, but forms a ball. For cereal bits, dough should be very soft and not form a ball. For Crackers: Refrigerate dough for at least one hour. Using sweet rice flour, roll portions of dough on plastic wrap or parchment paper to about 1/4 " . Cut into squares and prick with form. Transfer to baking sheet. Bake in 325F oven for 15-20 minutes. Crackers should just be getting browned. Cool slightly on sheet b4 removing to rack to cool completely. Store in airtight containers. For Cereal Bits: Transfer dough to piping bag fitted with small flat (#48 works well) or star tip (#75 works well). Pipe 1 " squiggles onto parchment lined baking sheets. Sprinkle with mixture of 2 T caster sugar plus 1/2 tsp pumpkin pie spice. Bake at 325F for 15 minutes or until starting to brown. Cool slightly on sheets b4 removing to linen dish towel to cool completely. Store in airtight containers.
