Also corn starch is added to it alot for some reason which would make it illegal as well. I've found it very hard to find in the store. Could someone please let me know what I should look for. I get my vanilla at Trader Joes. I think it just has alcohol and vanilla beans in it. If you have a TJ's near you, you could look there, otherwise any vanilla with legal ingredients should be fine. (no sugar, corn syrup, etc...) It contains in this order of listed ingredients: water, organic alcohol and organic vanilla bean extracts. My question here. I would like to make my own because I have discovered since being on SCD that any grain alcohol, and sometimes grape alcohol, do not seem to annoy my gut but give me excruciating pain the next day, much the same as nightshade foods do. But, every recipe I've ever seen for vanilla tells you to soak vanilla pods in something bland like vodka, and to me, that would have both the alcohol and the nightshade from the potatoes. So, has anyone made vanilla any other way? I was thinking of maybe simmering gently in a bit of water and then mashing it to release the vanilla and then adding glycerin? Would that work? You could try cooking them down, but I don't think you'd get the same product at the end. For now, I looked up making bourbon and it is grain-based (must by law be 51% corn, plus whatever), and also has yeast. Since I don't know if there's one particular grain alcohol that is causing this extreme pain, or the alcohol itself, I guess I will skip the bourbon vanilla for now though it sounds delicious! When I next order supplements I will see about getting some food grade glycerin, plus maybe the answer is just to take a little bit of a vanilla bean and simmer it in water like one does prunes, to soften. I wonder what would happen if you made vanilla oil, and then put an egg, a bit of lemon juice, a touch of white pepper, and made a mayonnaise-like emulsion with it. Bet it'd make an interesting dairy-free topping.... Marilyn Yum! That sounds like a great idea! And I like the vitamin E idea, I think it needs something to help it last a little while. It seems like you have to use double the amount to taste it. I does not smell very strong either. The expiration date is fine. Is it just me or does Adam's (illegal) seem a lot stronger? Would homemade vodka vanilla be better? The sugar that is often placed in illegal vanilla extract (or the high fructose corn syrup) enhances the taste of the vanilla. I have 8 beans in mine and it has a pretty strong vanilla taste. Remember, you can top it off with vodka until it gets weak and then add more beans and so on to keep it at the strength you like it.
