Look for Vanilla with no sugar or natural flavorings in it. Also corn starch is added to it alot for some reason which would make it illegal as well. I've found it very hard to find in the store. Personally, I either make my own or get it from digestivewellness.com Pretty cheap there, it's good (i've used it) and it's legal :)Hope this helps!-UC - 1+ yearsSCD - 11 months 100% strict and 4 months restricted diet.Colazol - 9 pills a day Prednisone 25mg entocort With vit E mixed inBack to intro/stage 1 for now.To: BTVC-SCD From: willowcreek09@...Date: Sat, 22 May 2010 22:12:17 +0000Subject: vanilla

I wanted to make veggie muffins and it called for vanilla. I realized my vanilla is probably illegal. I am going to a health food store on Monday. Could someone please let me know what I should look for. Thank you.

I think it just has alcohol and vanilla beans in it. If you have a TJ's near you, you could look there, otherwise any vanilla with legal ingredients should be fine. (no sugar, corn syrup, etc...) I have a legal (I think) vanilla, brand Simply Organic. It

contains in this order of listed ingredients: water, organic

alcohol and organic vanilla bean extracts.

My question here. I would like to make my own because I have discovered

since being on SCD that any grain alcohol, and sometimes grape alcohol,

do not seem to annoy my gut but give me excruciating pain the next day,

much the same as nightshade foods do.

But, every recipe I've ever seen for vanilla tells you to soak vanilla

pods in something bland like vodka, and to me, that would have both the

alcohol and the nightshade from the potatoes.

So, has anyone made vanilla any other way? I was thinking of maybe

simmering gently in a bit of water and then mashing it to release the

vanilla and then adding glycerin? Would that work? Is glycerin

legal?

only way i've ever made it is in a jar of vodka. You could try cooking them down, but I don't think you'd get the same product at the end. If you're using it as a baking ingredient, does it still bother you even though the alcohol will be cooked out of it?-UC - 1+ yearsSCD - 11 months 100% strict and 4 months restricted diet.Colazol - 9 pills a day Prednisone 25mg entocort With vit E mixed inBack to intro/stage 1 for now.To: BTVC-SCD From: My-Stitches@...Date: Sat, 22 May 2010 18:31:44 -0800Subject: Re: vanilla

Is bourbon a problem? Trader Joe's has a bourbon based vanilla that is very

good!

Thanks for the hint. I will remember this for later. For now, I

looked up making bourbon and it is grain-based (must by law be 51% corn,

plus whatever), and also has yeast. Since I don't know if there's one

particular grain alcohol that is causing this extreme pain, or the

alcohol itself, I guess I will skip the bourbon vanilla for now though it

sounds delicious! When I next order supplements I will see about getting

some food grade glycerin, plus maybe the answer is just to take a little

bit of a vanilla bean and simmer it in water like one does prunes, to

soften. That way I wouldn't have a whole lot to go bad at any one

time.

Hmm. I wonder what would happen if you made

vanilla oil, and then put an egg, a bit of lemon

juice, a touch of white pepper, and made a

mayonnaise-like emulsion with it. Bet it'd make

an interesting dairy-free topping....

Marilyn

Yum! That sounds like a great idea! And I like the vitamin E idea, I

think it needs something to help it last a little while.

Glad someone brought this up.  I have had legal vanilla unopened for awhile in the pantry.  I just don't use it very often.  It seems like you have to use double the amount to taste it.  I does not smell very strong either.  The expiration date is fine.  Is it just me or does Adam's (illegal) seem a lot stronger?  Would homemade vodka vanilla be better?  It's kind of expensive to double up on even though I rarely use it.

At 09:39 PM 5/31/2010, you wrote:

The sugar that is often placed in illegal vanilla extract (or the high

fructose corn syrup) enhances the taste of the vanilla. THat's why they

do it -- so they can get away with using less of the expensive vanilla by

using cheap sugar.

You could make double strength homemade vanilla (12 beans per 1 quart of vodka).

I have 8 beans in mine and it has a pretty strong vanilla taste. Remember, you

can top it off with vodka until it gets weak and then add more beans and so on

to keep it at the strength you like it.
