L. Casei is fine. <g> I asked that question, myself, when Progurt

first came out!

You may wish to add some acidophilus to the mix when making your yogurt,

or take acidophilus capsules along with it.

Which edition? What page?

Does it specify that l. casei is not legal, or does it specify that the

legal yogurt bacteria are s. thermophilus, l. bulgaricus, and l.

acidophilus?
