I know that some people use methycellulose gel in place of xanthan or

guar gums in baking, so I think it's okay. I don't know if it can be

derived from more than one source, though. Anyone?

My son who has been on the diet over 2 weeks is missing icecream. We

haven't been able to find sorbert so I thought I would check Dairy

Queen. I found this cherry-lime frozen treats. The ingred. are just

water, sugar, natural flavor, citric acid, methylcellulose (that is

the one I'm wondering about) carob bean gum, guar gum, pectin, and

ascorbic acid. What do you think? He is just GFCF. We aren't

Everything you wanted to know about methylcellulose (and way more than that)

Chemical make up http://www.herc.com/aqualon/product_data/images/250_10h.pdf

As Dietary fiber http://www.herbafood.de/forsch01_e.pdf

CMC (Carboxymethylcellulose) is a cellulose ether, produced by reacting alkali

cellulose with sodium monochloroacetate under rigidly controlled conditions.

The cellulose is derived from...well....trees.

Slightly OT...but kind of fun...

From a great page on making slime

....http://freeweb.pdq.net/headstrong/slime.htm

Methylcellulose

[]Methylcellulose is what " movie " slime is made of. It is an organic

thickener used in many of the foods we eat. Mixed with a little water and

coloring and allowed to " set up " , it makes one of the most beautiful of all

the slimes (see " Ghostbusters " ). Unfortunately, it is organically based and

tends to stink/dry out fairly quickly. Not really recommended for home use.

However, if you really feel compelled to make a batch, try some of the

motion picture supply houses listed on the web.
