Does anyone know if it's okay? Ingredients: sugar, dutch cocoa, rice flour, cornstarch, potato starch, chocolate chips (sugar, chocolate liquor, cocoa butter, soya lecithin, GF vanilla extract), xanthan gum, salt. On page 62 of Special Diets for Special Kids, describes it as coconut oil and recommends replacing butter or margarine in recipes with 3/4 the amount with unprocessed organic coconut butter. Coconut butter has anti-fungals in it, however, whereas cocoa butter might contain fungus (depending upon whether they take the cocoa butter out of the cacao beans before or after they ferment them to make chocolate.)
