Helene,

When we first started this diet my husband and I went on a trip to Germany while

my Mom watched my kids. I had everything written down in detail, because a big

concern of mine was what would happen if something happened to me. We have been

at this for four years now, and although he is not as informed as I am, my hubby

has a pretty good idea of what can have. The only other person I would

trust is my mom, she also knows fairly well what the diet consists of. I think

it is a very good idea to have everything written down in explicit detail. You

have inspired me, to once again write everything down and give my husband clear

directions on how to use this site, etc....

-Hi Helene...I've also had similar thoughts lately and it inspired me

to keep a notebook. I have everything outlined in the notebook in

regards to diet and supplements and also have a recipe box with GFCF

recipes and a shopping list complete with brand names and store info

(since a lot of my ordering is on the internet). I know that if

something happened to me, my husband would be clueless without all of

this.
