That's a big deal - he's usually hard to impress when it comes to food. So I figured I should share. Zuchini casserole 3 medium zuchinis 1 onion (med-large), chopped 1/2 cup almond flour 1/2 tsp salt 1/3 cup shredded cheddar cheese (I used a bit more, since DH is a cheesaholic) 1 egg, beaten 1/4 tsp pepper 1 tbsp butter Saute onions and zuchini until very soft. Mix in almond flour (reserving 1 tbsp for top), Add cheese, egg, salt, pepper and butter. Spoon into greased casserole. Sprinkle reserved almond flour on top. Bake at 375 (uncovered) until brown (recipe says 10 minutes, but I left it on a lot longer to brown). Quote Link to comment Share on other sites More sharing options...
