I read in a dehydrating guide book that chicken (which I would assume might be extended to cover all fowl) needs to be cooked first before dehydrating. I can't remember why just now, though. This recipe is from my friend Eloise on the GAPS list; I use a quarter of the garlic and you can sub the chili powder for something else as well. This is super easy! I also vacuum seal after jerky is made and since it is such a large amount I put a whole bunch in the freezer. Jodi ============================= "...9 pounds of ground beef or buffallo (one pound per tray in my dehydrator) 9 cloves of garlic thru the garlic press 10 tsp sea salt 2 bunches of cilantro blended in the food processor 1 tsp of chili powder Mix all ingredients by hand in a huge bowl til well blended. Cover with a towel and let sit for an hour to marinate. Divide into 9 even portions. Place one portion on teflex sheet, cover with wax paper and roll out evenly at least 1/4 in thick. Score with pizza cutter. Place trays in dehydrator on jerky temp 155 degrees. Set timer for an hour and return with cutting board and kitchen scissors. Cut on score line, return to dehydrator screens (remove teflex sheets). Let dry for 10-12 hours.
