Thanks Marilyn.  You remind me of Cook's Illustrated--they go through all the steps and tell you why something worked or didn't work so it's a lot easier to learn a method--the method--when you switch ingredients around.

 

Maybe I'll get the nerve to try the souffle bread someday!
