Does anyone know if Mounds or Baker's coconut is GFCF?

But I was talking with someone recently and she said she'd stay away from coconut oil b/c it's a single chain and it takes too much energy to break that. Hm, I've never heard anything like that. From what I understand, coconut oil is a mostly saturated fat made up of medium chain fatty-acids, which are quickly broken down to give immediate energy. Everything I've read about coconut oil indicates that it's a really good healthy source of energy for the body, not that it's taxing to break down. If you google coconut oil, I think you'll be able to find many good sources of info, and then you can decide for yourself. I've always heard, read, and been told that coconut is extremely healthy

for us, just as Alyssa says. The only thing to watch for being if you

have a candida problem you will want to limit amounts so you don't get

too much stirred up at once, sort of like yogurt and die-off from the

bacteria.
